Also called the "Butcher's Steak", the hanger steak is a butcher's best kept secret. The muscle it comes from supports the diaphragm between a cow's leg and is just kind of "hanging there" so it is extremely tender since it doesn't support a lot of functions. Only one per cow so these are very limited.
