Black kale, also known as Tuscan kale, dinosaur kale, and cavolo nero, has long, dark green leaves with a pebbled appearance. It has a deep, earthy flavor that's less bitter than curly kale, with a nutty sweetness. 

Black kale provides many of the same health benefits as curly kale and red Russian kale, but it also provides some unique benefits including cancer prevention and preventing the growth of tumors. A single serving (one cup) contains more than a day's worth of vitamin A requirement, which is important for eye health and immune function. It is also full of vitamins K, C, and B6 as well as manganese, copper, calcium, and magnesium. 

Black kale can be used in stir fry. To make, heat some sesame oil over high heat, cook garlic, chili, and fresh ginger for a few minutes, and add in the black kale leaves, cooking for about 3-4 minutes.
